Loving my baking stuff

 Me, flat icing the large portion of our sculpted cake - While I have to admit this isn't my favorite cake done, it was my first sculpted cake that I have ever done.  The chef said that we did a good job on it for our first time, I just feel that my work is better than this.  I found out after we finished that this cake was going to be on display for an open house of about 200 people.  The only thing that the chef thinks we could have done to make it better for presentation was to use the steamer to make it all shiny and pretty, but it wasn't available to use when we all finished our cakes.

Last Quarter - Week 2

Wow, the time is really flying.  I am enjoying this last quarter, even though it has been very fast paced and there isn't much time for anything else.  Here are some of the things that I have done for week two.  :)

This is a fresh fruit charlotte - it was VERY good.  Everyone loved it. :)
 This is called a Dobos Torte. Very rich torte, but so far was a favorite of several.  :)
 Fondant covering

 Royal icing work - practicing





 Plated desserts - strawberry bavarian with almond lace cookies and a chocolate rum sauce. This was one of the better plated desserts that I have ever made up to this point :)
 Biscotti
 Peanut Butter bread - this was a tester recipe and it turned out pretty good.
 Blackberry coffee cake and apple cinnamon coffee cake.
 Regular Coffee cake.
 Fruited bread pudding
 Bostoc - done wrong, but oh so good, mmmm...

A LOT to catch up on - hope you enjoy the pics

There are a bunch of pics that I need to catch up on.  I hope you enjoy the newest pics of cakes and stuff that I have made.  :)  Some I am happier with than others, lol.

This was for my nephew, Tyler's, birthday. He plays little league and so this was very fitting.

 Josh's uncle takes pics for the Indy 500 every year so I made him this for his birthday.
 Baby Shower #2 - my best friend here in Indy is expecting and the baby's name is going to be JB.  I am so excited for her!!! She loved this cake. :)
 I absolutely LOVE the daisys on this cake.
 This is the production from my bread class final exam.  There is ciabatta, challah, baguette, and croissants.
 I made cupcakes for my bestie to do a food photo shoot for her class.
 First cake done in Advanced Patisserie class this quarter.  I did orange because my daughter LOVES orange, and the reason I put welcome Katy is because she is moving up here in a few days and I am excited to have her finally here.
 I was practicing for a wedding cake that I am going to be doing in October.  She wanted the brown and burnt orange, with ribbon and dots.  The daisies were a surprise, and the surprise is on me, because now she wants them on her wedding cake, lol.

 I was part of a demo at Michaels for a Wilton class and I made and decorated this cake.  I fell in love with the fondant/gumpaste calla lilies. :)
